Our
Barbeque Pork is pulled from hickory cooked shoulders. We add no seasonings
or sauces to the meat while it is cooking. There is nothing added to interfere
with the rich woodsy smoke flavor.
Our
SMOKED chicken is hickory cooked. It is not, however a true smoke cure
process. The cooking process does render the chicken meat slightly pink.
It is cooked to 160 degrees and is absolutely delicious to eat!!!! (If
you donŐt like your smoked chicken pink, order something else!)
Our
chicken fingers are fresh, never pre-battered nor frozen -- -- all locally
grown, straight from RussellvilleŐs VERY OWN GOLDKIST Poultry.
Yes,
our potato salad does have onions in it, while our slaws do not. We make
our own potato salad.
And
while you are at it, order your BBQ sandwich with our new mustard slaw
on it.
A
note on seasonings and marinades: Blackened seasonings on fish and chicken
are very rich, fairly hot, quite spicy. Lemon pepper seasonings are somewhat
sour and tangy with a semi sweet peppery flavor. Marinated menu items
have flavorings from garlic, onion, fruit juice, sugar, peppers, and citrus.
The
largest part of the menu offerings we feature at SPEEDY PIG are prepared
fresh when you order your dinner, much of them from scratch. We strive
for consistency in both the quality of our food and service.
We
